Spring is one of my favorite seasons for so many reasons, including Easter and Mother’s Day brunches. I absolutely love any excuse for a good brunch! Today, I’m observing Frozen Food Month by sharing my cauliflower gnocchi brunch skillet recipe which celebrates veggies in a fun, delicious new way!

Cauliflower Gnocchi Brunch Skillet with Cauliflower Hash Browns with Sour Cream and Scallions

Green Giant® has introduced a clever product that lets me add more vegetables into my breakfast and brunch dishes with Green Giant® Cauliflower Gnocchi & Green Giant® Veggie Hash Browns.

As I’m always seeking ways to incorporate more farm fresh veggie goodness into our daily meals, I’m truly delighted with both these new products. They not only taste great, they are made with real cauliflower and contain a full serving of vegetables in each serving. If you happen to have picky eaters in your family, it’s an ideal way to swap-in more veggies without sacrificing taste.

Cauliflower Gnocchi Brunch Skillet with Cauliflower Hash Browns with Sour Cream and Scallions

Green Giant® Cauliflower Gnocchi

When I picked up the package of Green Giant® Cauliflower Gnocchi Original, I immediately knew I wanted to try using it in my traditional gnocchi skillet that I often make for brunch. It’s a quick, easy and savory dish that’s great for breakfast, brunch or even those times when you’re in the mood for traditional breakfast fare at dinnertime.

While I use pork sausage in my recipe, you could even go full-on-veggie and swap in vegetable sausage crumbles, instead.

If you want a heartier meal with more veggie power, use Green Giant® Veggie Hash Browns Cauliflower for your side dish. Below you’ll find directions for adding a little flair to your hash browns with sour cream, scallions, and even a little bit of bacon, if preferred.

Together these two dishes will make your brunch time a delectable treat!

Cauliflower Gnocchi Brunch Skillet with Cauliflower Hash Browns with Sour Cream and Scallions

Cauliflower Gnocchi Brunch Skillet

Ingredients

2 packages Green Giant® Cauliflower Gnocchi Original
8 ounces of breakfast pork sausage (alternatively, may use veggie sausage crumbles)
1/2 cup tomatoes, diced
1 teaspoon Italian seasoning
2 cloves garlic, diced
1/2 cup Asiago cheese, shredded
2 Tablespoon fresh parsley, chopped
2 Tablespoons extra-virgin olive oil
salt and pepper, to taste

Instructions

Preheat oven to broil.

In a small bowl, toss tomatoes, a drizzle of olive oil and Italian seasoning until seasoning is fully distributed.  Set aside.

Bring a large pot of lightly salted water to boil.

In a large skillet, crumble and cook pork sausage. Cook and stir until fully browned and cooked to safe USDA standards.  Remove sausage from pan, set aside.  Wipe pan clean, set aside.

Add Green Giant® Cauliflower Gnocchi Original to boiling water and cook per manufacturer’s instructions (currently 2 minutes).

While Gnocchi is cooking, preheat large skillet over medium heat with extra-virgin olive oil.

Add garlic to skillet.

Drain gnocchi and add to skillet.  Cook per manufacturer’s package instructions (currently 5 minutes).

Add sausage crumbles, tomatoes and 1 Tablespoon parsley.  Cook for 2 minutes, stirring gently to fully incorporate ingredients.

Remove from heat.

Sprinkle Asiago cheese over skillet.  Place skillet into oven. Broil for 2-3 minutes or until cheese is melted and lightly browned.

Remove from oven.  Sprinkle remaining parsley over the cheese.  Serve and enjoy!

A great side dish for this recipe is:

    We bought an air fryer last year and we use it to cook hashbrowns regularly. We don’t really do anything special with them. They are usually just a side dish or are shredded and put inside breakfast taquitos. I think we would probably use these in much the same way.

      Aren’t air fryers wonderful? We use our regularly, too and these cauliflower hash browns turn out perfect in the air fryer. Yum to breakfast taquitos, sounds delicious!

      They both are, for sure! We were surprised how good they are and you really don’t realize they are made with cauliflower as a primary ingredient at all. Let me know what you think when you get the chance to try them!

    We actually have Green Giant cauliflower gnocchi in our freezer. I bought it when it was bogo at Publix. I’ve been pondering what to do with it and enjoyed looking at the Green Giant recipes. I think we will make Cauliflower Gnocchi with Pancetta and Peas! It sounds really good.
