Looking for a great tasting better-for-you on-the-go breakfast option? These Vanilla Cherry Pecan Muesli Muffins are chock full of protein, fiber and and oodles of natural goodness that you need to fuel your body for the day. Plus they are ridiculously delicious!
I discovered Seven Sundays Muesli when I was searching for fresh fall flavors to enjoy and instantly fell in love with this simple, nutritious and natural breakfast treat. The problem is, I don’t always have time to enjoy a bowl in the morning, so I wanted to find a version I could use for grab-and-go. So I experimented, starting with an oatmeal muffin recipe I have, tweaking it until I came up with a wonderful recipe that utilizes another of my organic favorites, GoGo Squeez!
Two of these muffins makes a fabulous, filling breakfast when enjoyed with a glass of juice or a cup of coffee. I like to pop two in a baggie and enjoy when I’m traveling, too. Far superior to any over-priced airport breakfast option available! You could also pack a tin of them to enjoy during your work or vacation travel to ensure you have a great start to your day. Muesli is available in gluten-free options, too, making it a wonderful alternative for those who are gluten-sensitive.
Lastly, if you want an even healthier version, you can eliminate the brown sugar from the recipe. I happen to like the little element of extra sweetness, but the muffins are very tasty without it, too.
Vanilla Cherry Pecan Muesli Muffins
Yield: 1 dozen muffins

Ingredients:
1 bag (12 oz.) Seven Sundays Vanilla Cherry Pecan Muesli
1 pouch (3.2 oz.) GoGo Squeez Organic AppleCinnamon
2 eggs
1/2 cup brown sugar
1 1/2 cups milk
2 teaspoons baking soda
1/2 teaspoon salt
Note: You may swap in 3 cups of any Muesli of choice for the Seven Sundays Vanilla Cherry Pecan Muesli. You may swap in any pouch of GoGo Squeez applesauce flavor of choice OR you may substitute with 3/4 cups of applesauce (plus 1 teaspoon of cinnamon if you would like a stronger cinnamon flavor in the muffins.)
Directions:
In a large mixing bowl, add eggs and brown sugar. Whisk until fully mixed.
Add GoGo Squeeze, milk and salt. Whisk until fully mixed.
Add Seven Sundays Vanilla Cherry Pecan Muesli and baking soda. Stir until fully incorporated. Set aside for 45 minutes.
Preheat oven to 350 degrees Fahrenheit.
Add muffin/cupcake liners to muffin tin. Pour 1/4 cup of muesli batter into each cup.
Bake muffins for 30 minutes. Remove from oven and cool on a cooling rack for ten minutes. Serve and enjoy!
Remaining muffins may be stored in refrigerator for up to 1 week. If you prefer the muffins warm, gently warm in the microwave (for about 10 seconds) prior to serving.
