You may have noticed, this week we are building on a grilling theme around here with plenty of Greek-inspired dishes to enjoy! When serving up Greek Grilled Salad and Souvlaki with fresh vegetable skewers, I always like to add in one of my favorite accompaniments, Oregano Buttered Brown Rice. This side is so easy to prep and cook and adds just the right rich flavor to your meal.
Like all our Greek-inspired recipes featured this month, I found everything I needed at one of my all-time favorite grocers, ALDI. If you don’t have an ALDI nearby, you can certainly swap in other comparable ingredients to recreate this recipe in your home. One thing I know for certain, your family will soon be saying “fantastikós!” when you serve them this delicious side dish!
Oregano Buttered Brown Rice
Ingredients:
1 cup Fit & Active Instant Brown Rice (whole grain)
1/2 teaspoon Chef’s Cupboard Premium Chicken Soup Base
1 Tablespoon Countryside Creamery Sweet Cream Unsalted Butter
1 Tablespoon Extra Virgin Olive Oil
1/2 Tablespoon of fresh oregano, chopped fine or 1 tablespoons dried oregano
1 1/2 cups water
Instructions:
In a small sauce pan, over a medium heat, add butter, rice and olive oil. Heat until butter is fully melted, stirring regularly.
Add chicken base, stir until fully dissolved. Add oregano, stir to fully incorporate.
Increase heat to medium-high, add water. Stir rice and bring to a boil.
Cover the sauce pan with a lid. Reduce heat to simmer. Simmer 15 minutes or until water is fully absorbed by rice. Remove from heat, fluff rice with a fork, serve and enjoy!
