Summer Grilled Greek Salad Recipe

Picnic and party season is here and I have my grilling apron ready!  Thanks to my partnership with ALDI, we’re grilling up a delicious, fresh twist on a farm fresh favorite.

Salads are my summertime staple.  I love enjoying them daily for lunch or dinner and sharing with friends when it’s picnic time.  Recently, after grilling romaine for a lovely ranch salad, I was inspired to take things a step further and test out some of my favorite salads styles in a fully grilled version.  The results have been divine!  The flavor and texture profiles morph into a ridiculously-good version with a wonderful trace of smokey flavor that only comes from grilling.   My new favorite is what I’m dubbing “Summer Grilled Greek Salad.”

Summer grilled Greek salad mimics my traditonal Greek salad recipe incorporating all the fresh produce I love.  Though I omit olives, for those who love them, be sure to add them in as they will definitely pack a tasty punch!  I think the new Specially Selected Garlic Stuffed Queen Olives from ALDI would truly elevate your dish.

As you know, the base of any great salad begins with fresh produce.  With ALDI’s commitment to healthy and organic selections, it’s my go-to grocer for seasonal vegetables and salad embellishments like cheese and dressing.  The range of organic produce and locally grown selections is always delightful, fresh and ripe for my picking.  Have you been in an ALDI store lately?  The variety of produce always amazes me and everything is always high quality.  Just look at these eggplants I found while picking out my salad combo, they certainly made it into my cart, too:

My entire salad is chock full of ALDI goodness and lively flavors, you’ll find every ingredient you need at your local ALDI (products may vary by location.)   It’s easy to prep, make and thoroughly enjoy.  You can customize to make enough salad for one person or plenty for a large group, making it a healthy option to serve up at your upcoming graduation party, Memorial Day picnic or family gathering.

Summer Grilled Greek Salad

Tanimura & Antle Artisan Lettuce, leaves seperated
Vine tomato, sliced thin
Cucumber, sliced thin
Red onion, sliced thin
Green pepper, sliced into thin rings
Happpy Farms Preferred Crumbled Original Feta Cheese
Carlini 100% Pure Olive Oil
Specially Selected Gourmet Greek Vinaigrette Dressing

Optional:  sliced radish, olives (halved)

Summer Grilled Greek Salad Recipe

Cover grill tray with foil.  Coat foil with a light layer of olive oil.  Spread out produce in an even layer onto the grill tray.

Grilling Tip:  If you do not have a grilling tray, a double layer of foil may be used as a substitute.

Preheat grill to a medium temperature.  Place grill tray onto grill and close grill.  Heat salad for 5 minutes.  Open grill, flip sliced vegetables and greens over.   Re-cover and grill an additional 5 to 10 minutes (or until vegetables are thoroughly heated and softened.)

Remove grilling tray from grill.  Arrange lettuce in a base layer on a platter.  Top evenly with vegetable slices.  Pour a thin coating of Specially Selected Gourmet Greek Vinaigrette Dressing over salad.  Top with a generous dusting of Feta cheese.  Serve warm and enjoy!

Notes

If you enjoy a bit of bread with your salad, grab a pack of ALDI brand Specially Selected NAAN Tandoor Baked Hand-Stretched Flatbread and toss it on the warm grill to heat up. Grill each side of the NAAN for one to two minutes, then remove, slice and serve with your Summer Grilled Greek Salad.

    I have not tried grilled salad but Ive tried grilled peaches and those are amazing… salad would be healthier for sure!

    I usually have grilled chicken, but every once in a while splurge with steak (especially leftovers). Some garlic dressing on either and it is so good!

    I never thought to grill a salad like this!! What a great side item, we grill all the time in the summer!
