Warm and Comforting Vegetable Soup Recipe

Rural Mom’s Vegetable Soup Recipe

Ingredients:

1 large onion, chopped
3 cloves of garlic, minced
2 carrots, peeled and diced
1 zucchini, diced
2 stalks of celery, diced
1 large potato, peeled and diced
1 can of diced tomatoes (14.5 ounces)
4 cups of vegetable broth
2 teaspoons of dried thyme
1 teaspoon of dried basil
Salt and pepper to taste
1 cup of chopped kale or spinach (optional)
1 cup of cooked and drained chickpeas or white beans (optional)

Instructions:

  1. In a large pot, heat 1 tablespoon of oil over medium heat.
  2. Add the onion and garlic and cook until softened, about 3-5 minutes.
  3. Add the carrots, celery, potato, zucchini, and diced tomatoes to the pot and stir to combine.
  4. Pour in the vegetable broth, add the thyme and basil, and bring to a boil.
  5. Reduce heat to low and let the soup simmer for 20-30 minutes, or until the vegetables are tender.
  6. Season with salt and pepper to taste.
  7. If using kale or spinach, add it to the pot in the last 5 minutes of cooking.
  8. If using chickpeas or white beans, add them to the soup in the last 2-3 minutes of cooking.
  9. Serve hot, garnished with chopped fresh parsley or grated parmesan cheese if desired.
