During the holidays, or for any impromptu gathering, I don’t like to waste a lot of time in the kitchen. It’s much more fun to spend time with all your guests and enjoy the party. That’s why I love whipping up quick and easy appetizers like Cucumber Bites with Salmon Mousse.
This super simple recipe has a luxurious taste and it’s chock full of some great nutrients, too. You can use crackers for the mousse, but I prefer cucumbers, not only for their farm fresh goodness but the flavor combination is perfect. Plus, cucumbers add a nice fresh crunch to this delicious snack.
Cucumber Bites with Salmon Mousse
Silky smooth salmon with a dash of dill atop a thin slice of crunchy cucumber will definitely seduce your taste-buds! Serves 8.
8 ounces of Smoked Salmon
8 ounces of Cream Cheese
1 tsp Dried Dill
1 Cucumber, sliced into thin rounds
Optional: 1 clove Garlic, minced
Using a food processor, add salmon, cream cheese, dill (and optionally, garlic.) Pulse until fully combined. Blend for 1 minute or until fully combined and smooth.
Using a decorative icing bag with decorative star icing tip, pipe a dollop of the salmon mousse atop each cucumber slice. Dust with a little dried dill for garnish.
