Baby, it’s cold outside and I’m totally craving comfort food! We often make our resolutions to eat healthier in January, but I find that it is the toughest time of year. With bitter cold and often overcast days, my body doesn’t desire smoothies and salads. Do you have the same problem?
To compromise, I turn to some of my favorite farm fresh skillet recipes like Garlic Lemon Chicken that utilize seasonal produce. This style of cooking offers amazing fresh flavors and a comfort food appeal but still keeps you on track with your healthy eating goals.
Farm Fresh Garlic Lemon Chicken Skillet Recipe
Ingredients:
4 boneless chicken breasts (or thighs)
3 lemons – 2 for entree 1 for garnish
1 large onion, skin removed and sliced thinly
1/4 cup caramelized garlic
5 baby red potatoes, sliced (or 3 large red potatoes)
1 cup whole baby carrots
2 Tablespoon taragon
3 Tablespoons of paprika
1/4 teaspoon salt
1/4 teaspoon ground pepper
fresh parsley for garnish
Directions
In a large mixing bowl add chicken and evenly coat with paprika, salt, pepper and juice from one lemon. Refrigerate for 1 hour to marinate.
In large cast iron skillet over a medium heat, add 3 Tablespoons of olive oil.
Once the skillet is hot add your chicken cook on medium-high for 5 minutes (or until pan-side of chicken is a light crispy brown.) Flip chicken breast and cook for another 5 minutes (or until pan-side of chicken is a light crispy brown.)
Reduce your heat to medium and cook on both sides for an additional 5 minutes each, rotating as needed until chicken is fully cooked (reaching safe minimum internal cooking temperature per foodsafety.gov)
Remove the chicken from skillet and set aside.
Add potatoes, onions, and carrots to the skillet. Saute’ for 10 minutes over medium heat, tossing often.
Add juice from one lemon to the vegetable mix. Toss (or gently stir to distribute juice evenly.)
Add caramelized garlic to the vegetables and continue to sauté’ for another 5 to 10 minutes (or until carrots and potatoes are tender.)
Place the chicken back in the skillet. Cover skillet and simmer over low heat for 5 minutes.
Uncover and remove skillet from stove top.
Plate chicken with a portion of vegetable mix. Garnish with tarragon, parsley and lemon slices.

Hi there! We tried this recipe tonight and loved the flavor – but I was wondering if the 3 tablespoons and 2 tablespoons measurements were meant to possibly be teaspoons? My chicken – color wise – was much heavier with paprika. The entire family did enjoy this!
