Picnic season is upon us and summer is nearly here. It’s the perfect time to enjoy the fresh slices of the watermelon that will soon be popping up in our gardens, ripe and oh-so-delicious! If you want to spice things up a bit, a Watermelon Picnic Cooler (adults only!) is a refreshing way to enjoy nature’s sweet treat. Your picnic guests will be enchanted with the flavors that conjure up tropical paradise in a glass.
We’ve rimmed the glasses of the Watermelon Picnic Cooler with coconut shavings for a fun touch, but if you want to, you could use colored sugars instead, like green to mimic the watermelon rind, or blue for a patriotic touch. However you decide to dress it up this Watermelon Picnic Cooler will add a fresh summer twist to your backyard barbecues, picnics or celebrations!
Watermelon Picnic Cooler
Serving size: 2 8oz glasses
Ingredients:
4oz Malibu
4oz Bacardi
4oz Coconut water
4oz Watermelon puree
Ice
Simple syrup
Coconut shavings
Directions:
To rim the glass with coconut, you will need 2 appetizer plates.
Pour a thin layer of simple syrup onto one of the appetizer plates, enough to dip the glass’s rims in.
Add the coconut shavings in a thin layer onto the other appetizer plate.
Take your glass and dip it first in the simple syrup then into the coconut and set to the side.
Watermelon puree:
Remove rind and seeds from watermelon. Cut into small chunks and place in a blender.
Also add 2 tbsp. of sugar and 1/4 cup of water.
Puree for 1 minute or until watermelon is full pureed.
Cocktail:
In a bar shaker add Malibu, Bacardi and Watermelon puree- shake to combine.
Fill your glasses 3/4 of the way full with ice. Pour liquor mix into the glass until it is 2/3rds full.
Top off drink with Coconut water. Serve, enjoy and be sure to drink responsibly!
