There are a lot of benefits in going meatless, even if only for one day a week. Primarily, eating meat one less night a week saves money and is great for our health. With this in mind, we’ve been instituting Meatless Monday. It’s not a Vegan meal, but there is no meat allowed. Since this isn’t something we’ve been doing our entire lives, I looked to the Blogosphere for a little inspiration.
