In the spring and summer, my definition of comfort foods dramatically varies from the heavier stews and soups I prefer in the colder months. I tend to gravitate towards lighter dishes and foods with Mediterranean influences. When the weather warms up, my ultimate comfort classic for lunchtime or late night snacking is hummus.
Over the years, I’ve sampled many varieties of hummus from the grocer, but there’s simply nothing that compares to freshly prepped. When I don’t have time to soak beans or have the luxury of having fresh herbs on hand, my go-to recipe uses six pantry staples I keep around for said hummus emergencies!
When Good Cook challenged the Good Cook Kitchen Experts (which includes me,) to create a one pot comfort food using any of the five featured essential Good Cook kitchen tools (see picture below,) spring had finally arrived so I knew it was time to whip up some hummus.
Quick & Easy Moroccan Black Bean Hummus (scroll down for printable version)
1 can (15 ounces) low sodium black beans, drained and rinsed
2 Tsp garlic, minced
1 Tbsp extra virgin olive oil
2 Tbsp lemon juice
2 Tbsp Moroccan seasoning (I use McCormick Gourmet Collection Blend)
Dash of ground sea salt

Add all ingredients to a food processor. Pulse until ingredients are evenly distributed, then process until smooth.
Rural Mom Kitchen Tip: You can use pre-minced garlic or simply mince fresh garlic in the food processor prior to adding the remainder of the ingredients.

Use a spatula to transfer to a medium dipping bowl. Drizzle with olive oil. Optionally: add a dollop of minced garlic to the center of the dip and sprinkle dip with Moroccan seasoning.
Serve with pita chips, hummus chips or tortilla chips. Black bean hummus is wonderful served on pita bread or a spinach wrap with fresh greens and tomatoes in mock-sandwich or wrap style.

Rural Mom Kitchen Tip: If you do not have a Moroccan seasoning blend you may substitute the 2 Tbsp of Moroccan seasoning with:
– 1/4 Tbsp cinnamon
– 1/2 Tbsp cumin
– 1/4 Tbsp Ginger
– 1/4 Tbsp Turmeric
– 1/4 Tbsp Red Pepper
– and 1/2 Tbsp Paprika

What tools would you add to your kitchen drawer?
The five essential tools I tested from Good Cook this month are:
- SMART Ice cream scoop: This clever little scoop has a release mechanism that makes getting the ice cream out of the scoop a breeze. Will be handy for scooping mashed potatoes, watermelon, rice and other foods as well.
- Flip Measuring spoon: I have way too many measuring spoons (though, not sure you can ever have too many when it comes to holiday baking season,)… in any case, I think this one is a keeper. The flip design offers you a compact ability to have all the measurements you need in one spoon, but is also great for aiding you in releasing things like peanut butter into your recipe without having it cling to the spoon.
- Safe-cut Can Opener: As someone who has cut themselves plenty of times on serrated edges of can lids opened with standard can openers, the side cut design of this opener appeals to me. The can opener helps you remove the entire top lid of the can, leaving no ragged edges. I found that required a little more effort than a standard opener, but the effort was well worth the end result! This nifty, versatile gadget also serves as a bottle opener, cap twister, and tab puller.
- Egg Separator: As someone who raises chickens and who certainly knows my way around separating an egg with ease, this is not a gadget you’ll find in my drawer, but I think that novice cooks will love it as it does deliver as promised. It rests easily on most standard size bowls for ease of use.
- Pot Clip Holder: How many times have you dropped your spoon in the stew pot or make a saucy mess on the stove? I know I’ve done my fair share! The Pot Clip Holder is designed to keep your spoon in place on the side of any pot, sauté pan or fryer. It’s going to be a go-to for me when I use my Dutch oven. I’m hoping to see more size ranges in this product to accommodate larger-handled spoons – there’s definitely room in my kitchen drawer for a few more!
