Rustling up ingredients for Salmon Cakes |
Love Salmon, but as I’m the only one in my house that does, it’s a treat I don’t indulge in as often as I’d like.
Fresh Salmon is terrific at grill time, but I’d like to have something for spur-of-the-moment use to for recipes or simply for a yummy lunch alternative. As I’m not a big fan of preservatives, canned or pouched Salmon has been off my radar…

But does it taste good? To put it to the test, I decided to whip up some Salmon Cakes (adapted from a recipe I found in the Muffin Tin Chef cookbook) for a healthy lunch-time treat.

– Delish! I couldn’t resist sampling the salmon before mixing and found it to be very flavorful
– Fresh – as in the I just caught and filleted the fish
– Easy to work with. The salmon flakes well and was easy to mix

The end result was a fabulous lunch date with my favorite fish (hello Omegas-3’s!)
